It’s Been a While…

But I’m Raring to Go and Ready to Cook!

Ciao, my special Nilla’s Italian Kitchen family! It’s been way too long since we last connected—a whole 7 weeks since my last cooking class!

I have missed you all dearly, and I cannot wait to get back in the kitchen, rolling up my sleeves, and sharing more incredible food, stories, and laughter with you!

So, what’s been happening while I’ve been absent? SO MUCH!

Let me fill you in…

So tell me what’s been happening Nilla?

While I’ve been away from classes, life has been full of simple joys and special moments! Long walks, refreshing swims, and plenty of laughter have filled my days, but one little rascal has made sure things never get too quiet—our grand-dog Denver.

This playful bundle of energy has brought us endless joy (and maybe a bit of chaos!), much to the dismay of our precious Zahra, who is still adjusting to her mischievous new housemate!

Celebrating Life & Family

This break also gave me the chance to soak in precious family time. We celebrated both my niece’s birthday and my Zia’s birthday, moments that remind me how important it is to stop and cherish those we love. But the real treat? Having my Zia visit and pass down the secrets behind her legendary pizza—a masterclass in tradition and technique that I’ll treasure forever.

And, of course, seeing I don’t have classes at the moment a Saturday off meant I had the chance to see the hilarious Joe Avati live! His show, When I Was Your Age…, had me laughing until my sides hurt, bringing back memories of what it was like growing up in an Italian-Australian family—so much nostalgia wrapped up in humor and truth.

It’s been a wonderful few weeks, but my hands are itching to get back into the kitchen, and I can’t wait to start cooking with you all again soon!

A Labour of Love: My Book’s Final Touches!

Over the past few weeks, I have been deeply immersed in refining and shaping my book—ensuring that its message reaches those who need hope, resilience, and a reminder that food is more than nourishment.  Every recipe is woven with the stories of my life—memories of love, hardship, laughter, and the unwavering strength that has carried me through.

I am also excited to share that the cover has had a transformation! The roses symbolize the beauty and thorns of life, while the daffodils represent hope—an emblem of the journey this book takes you on.

I’ll be in touch very soon to let you know when it’s ready, but in the meantime—

Do you love the new cover? Let me know your thoughts!

The Magic of Food & Unexpected Connections

One special and unforgettable moment? Meeting Fara and her husband, an Iraqi couple who recently opened Baba Fattoush, a newly launched Middle Eastern café in Middleton Loop, Albany. (If you’re in Albany, go and say HI!)

Fara recognized me from our Nilla’s Italian Kitchen Facebook posts and was overjoyed to meet us. Before we knew it, we were wrapped in their incredible hospitality, and without hesitation, they treated us to a feast of their delicious food. The warmth, generosity, and passion they pour into their café is something truly special.

If you love authentic Middle Eastern cuisine (and trust me, their baklava is to die for!), then you NEED to visit them.

This was one of those beautiful, serendipitous moments that reminded me why I love what I do—food is the ultimate connector. It bridges cultures, brings people together, and creates bonds that transcend language and borders.

So, if you’re looking for an experience filled with flavour, heart, and true hospitality, make sure to visit Baba Fattoush!

Exciting Plans are in the Works!

I’m beyond excited as planning our next round of cooking classes are underway.

However, the one that I am most excited about is a very special 6-week Italian cooking course that will immerse you in heart of Italian cooking, this will suit people that want to go to the next level of Italian cooking and food.

While details are still coming together, here’s a glimpse of what I’m working on! that will immerse you in the true essence of Italian cooking:

Passata Making – Learn the art of bottling local summer’s best tomatoes
Pickling & Preserving – Bring the old-world flavours to life
Bread & Pizza Baking – Master the perfect dough and crust
Pasta & Sauce Perfection – Handcraft different pasta styles with delicious sauces

Italian Desserts & Biscotti – From classic tiramisu to biscotti perfection
Final Feast – You’ll cook and host with your fellow your own special dinner, showcasing everything you’ve learned—just like an Italian Nonna!

This experience is so much more than a class—it’s a journey into tradition, flavour, and connection.

I’ll be sharing all the details very soon and it is limited to only 8 special people, so if this sounds like something you’d love to be part of, stay tuned and register your interest at nilla@nillasitaliankitchen.com.au or call me on 0448872835.

And Guess What? More Exciting Classes Are on the Way!

That’s right—our Pizza Making Class is in the works, along with other exciting classes that will bring even more traditional Italian flavors to your kitchen! I can’t wait to finalise all the details and share them with you soon.

I am SO ready to fire up the kitchen again and welcome you all back—it has been far too long! Let me know if you’re excited for the 6-week course, and keep your eyes peeled for all details on our up and coming classes.

Wrapping Up with Gratitude,

Laughter & Excitement

As I sit here reflecting on the past few weeks, I’m reminded of just how special this community is. Every message, every shared meal, and every moment of connection in the kitchen fuels my passion to keep creating, teaching, and bringing people together through food.

The break has been wonderful, but I’m more excited than ever to step back into the kitchen with you all. Whether it’s through upcoming classes, my book, or simply the stories we share, I can’t wait for what’s ahead.

Thank you for being part of this journey with me—your support, enthusiasm, and love make it all worthwhile. Keep an eye out for updates, and until then, keep cooking, keep sharing, and most of all, keep filling your hearts and homes with joy—and of course, never forget to laugh along the way!

After all, as Joe Avati reminded me, laughter and food are the heart of our Italian heritage! “That’s a nice!”…LOL!
